How do you know whether you're getting granite or marble from the quarry? Is it random for half-and-half?

Also, how do marble mines work? I got the sense you could put one anywhere there was a mine building spot. Does it produce only marble or also granite/marble?

Pretty sure marble mines always make granite too. I think there's even info in the help file stating what the ratio is? Maybe...

The quarry produces marble 2 out of 7 times, namely every 4th and 7th time the worker goes to work. The other times it produces granite.

The marblemine produces always both marble and granite. The ratio of both can be 3:1 or 1:3 depending on what your economy needs.

I find this quite puzzling. I've been playing a barbarian for some time and have become quite good at it. I'm just starting with Empire now and am quite struggling to get enough marble to do anything At the end of "Crater" I had some 150+ stone but just a handful of marble, and the reason had any marble (and pillars) left is because I did not even build a proper economy. the empire even needs marble to build a piggery!

Two marble, and two marble pillars to build a simple farm? Marble seems to be more precious then gold for the empire and despite it's unobtainability I still managed to win crater from the barbarian ai. It does not feel very balanced.

The Empire requires multiple marble mines to function. For Barbarians, the Stone resource is just a backup in case you run out of rocks to quarry, and they can win many maps without ever building a granite mine. But for Empire, without marble mines it is practically impossible to build a large economy without mining marble from mountains. You should therefore build a small mining infrastructure (tavern, hunter or fisher, vineyard, and winery) as soon as your basic construction material production is established. Once the first two marble mines take up work it all gets much easier.

It is telling too that the Empire's first 2 essential manufacturing sites are for planks and for marble pillars. They do love their marble. Even farmers need pillars to adorn their barns...
